My Hyperfixation Salad — Hello Adams Family

Most days I have lunch at home. I’m in a big season of treating myself to something that feels fancy and satisfying without a ton of effort. My current hyperfixation salad is a take on a caesar salad but packed with protein and crunch. Top it off with Trader Joe’s Caesar Salad Dressing (if you haven’t tried their refrigerated dressings, you must!) or any dressing you prefer. This salad really satisfies all the elements of a salad that I love – salty, crunchy, light and fresh. Plus, you know I love a salad that is easily assembled with grocery items, too. Remember my pantry salad? Another favorite!

MY HYPERFIXATION SALAD RECIPE

Ingredients:
lettuce of your choice, I used baby gem lettuce, finely chopped
1/2 cup tuna, finely shredded
1/2 cup chickpeas
a big spoonful of capers
Trader Joe’s Vegan Caesar Dressing (or any dressing of your choice)
slivered or chopped almonds

Mix all together so you can a little bit of everything in every bite! Enjoy!!
