Everyone needs a no-fail chicken noodle soup to have on hand when the temps are cold and everyone in your house is sick. For me, you can make a basic chicken noodle soup that tastes or you can add some simple ingredients that seriously elevate the flavors. Lemon and garlic are two of those flavors that I LOVE in a chicken noodle soup. Here is my favorite recipe for no-fail homemade chicken noodle soup. Please let me know if you make it!
No-Fail Chicken Noodle Soup
Ingredients:
3 celery stalks, chopped
3-4 carrots, chopped
1/2 white onion, chopped
8 peeled garlic cloves
2 tbsp extra virgin olive oil
1 lemon, zest and juice
2 sprigs of thyme
1/2 tsp poultry seasoning
4 cups/1 box of low sodium chicken broth
1 cup shredded chicken (either rotisserie or roasted)
1/4 cup chopped parsley
1 cup dried pasta of your choice
red pepper flakes (optional)
parmesan cheese
salt + pepper
Sauté your mirepoix (celery, carrots and onion) in olive oil and and season with a pinch of salt and pepper. After 6-8 minutes (onions should be translucent-ish), add 8 whole garlic cloves, the zest of 1 lemon, the juice of the lemon, 2 sprigs of thyme (leaves only) and poultry seasoning. Heat together and then add your chicken brother + 2 cups of water. Season with salt and bring to a boil and let simmer for 30 minutes.
Using the back of a wooden spoon, smash each garlic clove into the pan. This will let the flavor seep into the soup! Add in your chicken and pasta. Continue to simmer until pasta is cooked through. Taste and add more salt/pepper to your preference. Mix in some chopped parsley and red pepper flakes. Serve with some shaved parmesan on top!
