Greek Salsa Recipe (great as a dip and with grilled chicken/steak/shrimp!)
After a very indulgent summer I’ve been trying to really focus on making healthy meals and consuming more whole foods. I’ve been cooking at home, avoiding processed ingredients, consuming all the veggies and increasing my protein. It has felt so good to be conscious about what i’m consuming and guess what, I don’t really miss the junk. I thought it would be fun to share some of the meals I’ve prepped for myself the last week or so. And because I know I’ll get asked, I love to adapt similar meals for my kids! Like if I’m making a rice bowl, I’ll add some taco seasoning and jazz theirs up a different way. Or I made a side batch of this greek salsa without the onion and put it into a pita with some shredded chicken. I love utilizing the same ingredients but in different ways for my kids. Charlie has been cooking in the kitchen with me more and it’s been so much fun to share the creativity of cooking with him!
I’m a big believer in balance. I can’t be 100% all or nothing. Some weeks I’ll try hard to be 90/10 and other weeks are 70/30 or even 50/50. The truth is finding balance for me has to be sustainable. I generally gravitate towards healthier options but I also food is meant to be enjoyed! So I just want to clarify that the exclusive whole foods life is not for me but I’m always trying to do my best for my body, mind and energy. Some nights that means chips, queso and a margarita.
